- 3 Tablespoons butter divided in half
- 1+ lbs Shrimp, peeled and deveined
- 4 cloves garlic, sliced
- 3/4 cup heavy cream
- 1/2 cup Parmesan cheese
- 1 cup halved cherry tomatoes
- 4 teaspoons chopped parsley
- 4 cups zoodles*
Directions:
- Melt 1 Tablespoon butter in skillet. Add shrimp and season. Cook shrimp until pink. Transfer shrimp to plate.
- Melt remaining butter in skillet and stir in garlic. Cook about 1 minute and stir in heavy cream.
- Bring to a simmer and add Parmesan, tomatoes and parsley. Simmer about 3 minutes until sauce thickens.
- Return shrimp to skillet and add zoodles. Toss to combine and cook for about 2 minutes tossing constantly.
