Corny Cajun Shrimp
- 1 bag frozen corn kernels
- 1/2 large onion coarsely chopped
- 2 ribs celery coarsely chopped
- 1 can (14.5 oz) diced tomatoes with green chiles
- 1 Tablespoon fresh Thyme
- 1 teaspoon creole seasoning
- 8 oz frozen, peeled cooked shrimp
- 1/4 teaspoon Mrs Dash Extra Spicy
- In a medium saucepan, combine corn, onions, celery, tomatoes, tyme and creole seasoning. Cover and cook over medium heat until the vegetables are almost tender (about 10 minutes).
- Stir in shrimp and Mrs Dash seasoning. Cook covered until shrimp are heated through (about 2 minutes). Season with salt, as necessary.
