Enchilada Crock Pot Beef


  • 1-1/2 lbs Beef Stew Meat
  • 1 can Mushroom Soup with Garlic
  • 1/2 package Lipton Onion and Mushroom soup mix
  • 1 - 10 oz can Green Enchilada Sauce
  • 1/4 teaspoon garlic power
  • 1/4 teaspoon Mrs Dash Extra Spicy
  • 2 Jalapenos sliced
  • 1 Beef Bullion cube
  • 1 cup of water
Add all ingredients into crock pot, except meat and place on high. Brown stew meat and after about 5 minutes, pour off the liquid into the crock pot. Sprinkle a little flour on meat in pot and continue to brown until nicely cooked. Place meat into crock pot, stir and cook on low for 4 hours.

Serve over Penne Pasta noodles.

If I were going to modify this recipe, next time I would not use the Lipton Onion and Mushroom soup mix, and add 1 medium onion, diced and browned and 1 Hatch Green Chile, skin removed and diced.
